Scale for your household

Serves 2

  • 4 oz smoked salmon (torn)
  • 1 large potato (diced tiny)
  • 1 red onion (diced)
  • 4 eggs
  • 1 tbsp white vinegar
  • 2 tbsp olive oil
  • 1 tbsp dill

Steps

  1. Pan-fry the diced potatoes and onions in olive oil for 15 mins until golden and completely soft inside.
  2. In a separate pot, bring water and a splash of vinegar to a simmer. Swirl the water and gently poach the eggs for exactly 3 minutes.
  3. Fold the torn smoked salmon and dill into the hot potatoes (do not cook the salmon, just warm it).
  4. Serve the hash topped with the delicate poached eggs.
