These snack sticks are made from grass-fed beef, seasoned with sea salt and cracked pepper, and smoked over hickory. Sodium nitrite cures the meat, holding its color and guarding against bacterial growth during the smoke; regulators in the US and the EU permit it at set limits for exactly this use. A lactic acid starter culture gives the sticks their tang, the way it does in traditional fermented sausage.
