What It Is

1-(2-Furyl)-1,3-butanedione combines a furan ring with a 1,3-diketone chain, a structure common among Maillard-reaction flavor compounds formed when foods are roasted or baked. It is used in small amounts as a flavor ingredient to add roasted, nutty character.
